Easter is just around the corner! If you’re still searching for the perfect menu to feed your family I’ve decided to put together my Easter Menu Roundup.
When I think of Easter, I’m brought back to the days when I was younger. My sister and I would get up early and go searching through the house for our Easter baskets. I loved the excitement of the search. My mom was always giving us hints: you’re getting warmer, warmer, oh now your cold, ok you’re on fire!
The day always seemed bright and filled with color. Or maybe that’s me just remembering my white easter basket stuffed with the bright green confetti and filled with colorful easter eggs. Regardless, it makes me feel light and happy.
When we were younger we’d always go to my Grandma’s house for Easter Sunday brunch. We would have smoked kielbasa, fresh kielbasa, sauerkraut, ham, cheesy potatoes, green bean casserole, that weird jello pudding stuff (hard pass) and all the jelly beans that a kid could ever want. How I miss those polish feasts and my Grandma!
This year, since we’re living in Switzerland, my menu is going to be looking a little different. We won’t be attending my husband’s family brunch and I won’t be indulging in all the Rose. Ok, well that last part could be a lie. There’s always going to be Rose for Easter.

While this isn’t ham it’s still a great option to serve for Easter! One, I can’t find ham at the stores here. Two, I’m trying to eat less meat. Three, I just really love salmon and it’s pink. This is my go to recipe that I’ve been making for years.
