If you haven’t figured it out by now, Strawberries are my favorite fruit during Spring. So let’s keep the trend going and talk about this Strawberry Chicken Salad. It’s light, super flavorful and perfect for lunch, dinner or to make when entertaining your friends and family.
I love making food that is vibrant in colors and this dish definitely checks off that boxes. Crisp greens, creamy feta cheese, bright strawberries, light homemade dressing, crunchy bacon, roasted almonds, fresh avocado and topped with grilled chicken. I mean, yes please!
If you’re looking to have this for dinner add in some cooked quinoa or roasted sweet potatoes. Of course adding a fresh baked roll to the side is also a must. If you know me I could have a hot roll fresh out of the oven with butter at every dinner. Since we’re talking dinner – pairing this with a Rose or Sauvignon Blanc would also take this to the next level.
This week has been crazy busy for me so I also am really enjoying meals that are simple, quick and delish. Since I haven’t been working for 6 months, heading out of the house for 13 days in a row has me feeling exhausted. Thankfully, 3 more days to go! I can do this!
Let me tell you, learning German and going to work at a food festival where your main language is English and everyone else is speaking Swiss German, Spanish or German can be mentally draining. After day 1 I was close to tears and feeling so out of place. BUT I reminded myself I can do hard things. I’ve taken each day by finding one thing I can learn from the discomfort. I’m understanding some phrases more clearly now and feeling like I’m adding value to our little family here abroad. So, I guess in the end we will call this experience a win.

Springtime Strawberry Chicken Salad
Ingredients
- 1 5 oz Package of mixed greens
- 2 cups Sliced Strawberries
- 8 slices Cooked Bacon I used a spicy bacon for an extra kick
- 1/2 English Cucumber cubed
- 2 Grilled Chicken Breasts
- 1/2 cup Roasted Almonds
- 1/2 cup Feta Cheese Goat cheese would be delish as well
- 1 Avocado
- 1/4 cup Dried Cranberries
Homemade Dressing
- 1/4 cup Apple Cider Vinegar
- 2 Tbsp Honey
- 2 Tbsp White Sugar
- 1 tsp Dijon Mustard
- 1/2 tsp Cumin
- 1 Tbsp Balsamic Vinegar
- Salt and Pepper
- 3/4 Cup Olive Oil extra virgin
Instructions
- To make the dressing whisk together all the ingredients besides the Olive Oil. Gradually add in the olive oil.
- Portion out your greens onto 4 serving plates. Top with cucumber, almonds, strawberries, dried cranberries, 1/4 of the avocado, feta cheese, bacon and cooked chicken. Drizzle desired amount of dressing on top.
