Baked Brie is a classic go to appetizer to serve for a crowd. But these Apple & Brie Crostini with Bacon Crumbles are this years Chef’s Kiss! They are perfect to server during the holidays for cocktail hour.
You guys, these Crostinis are the perfect thing to serve for your guests. Or if you’re like my husband and me, you can make half of what the recipe calls for and enjoy them with a large salad and call it dinner! I really don’t think there’s a wrong way to go here with these.
I think my favorite part of this recipe is that the apples get roasted in the oven while you’re preparing all the other ingredients. This adds a special touch that makes these super elegant and comforting. Plus it makes your house smell super delish with the mix of apple, maple syrup and thyme roasting away. Even just the apples would be great to put over some yogurt and granola or even some fresh Chantilly cream.
What You Need
- Apples
- Maple Syrup
- Extra Virgin Olive Oil
- Fresh Thyme
- Bacon
- Arugula
- Pomegranate Seeds
- Fig Jam
- Brie Cheese
- French Baguette
- Flaky Salt
How To Make the Apple & Brie Crostini
- Preheat oven to 425 Fahrenheit with the rack in the center of the oven.
- Add apples, maple syrup, olive oil and thyme to a 9 x 13 inch baking dish and combine. Nestle in the sprigs of fresh Thyme. Place in oven and bake for 25-30 minutes. Until soft and super delicious.
- While apples are baking, cook your bacon until crispy. Set aside.
- Brush both sides of bread with olive oil. Place on parchment lined baking sheet. Once apples are done, bake in oven for 5 minutes.
- Next, take bread out of oven and flip. Place a little fig jam and a piece of brie cheese on each baguette slice. Bake for 5 more minutes until soft and warm.
- Finally, top with a few leaves of arugula, then top with warm apples, bacon crumbles, flaky salt and pomegranate seeds.

Apple & Brie Crostini with Bacon Crumbles
Ingredients
- 2 Apples, sliced thin I prefer Honeycrisp apples for this but any will do!
- 2 Tbsp Extra Virgin Olive Oil plus more for brushing baguettes
- 2 Tbsp Pure Maple Syrup
- 4 Sprigs Fresh Thyme
- 6 Slices Bacon, sliced
- 2 Tbsp Fig Jam
- 8 oz Brie Cheese sliced thin
- 1/4 cup Arugula
- 1/4 cup Pomegranate Seeds for topping
- Flaky Salt for topping
Instructions
- Preheat the oven to 425 °F with a rack in the center position.
- In a 9×13 inch baking dish, combine the apples, olive oil and maple syrup. Toss to coat. Add the springs of time. Bake on the center rack until the apples have softened and the liquid has thickened, 25 to 30 minutes.
- While apples are baking, cook your bacon until crispy. Once done, let cool slightly and chop into tiny crumbs.
- Brush both sides of the bread with olive oil and arrange the slices on a baking sheet lined with parchment paper. Toast in the oven for 5 minutes. Remove from oven, flip bread and top with fig jam and a piece of the Brie. Return to oven and bake until Brie is melted about 5 minutes more.
- Take a few pieces of arugula and place on top of melty cheese. Top arugula with a spoonful of roasted apples. Top with bacon crumbs, flaky salt and pomegranate seeds.
