Breakfast can be elegant, especially when avocado toast is involved. Breakfast never used to be my favorite meal of the day. I was always more of a blend up a smoothie and hit the roadrunning kind of gal. UNTIL there became the beautiful trend of Avocado toast. I mean who would have thought such simple ingredients combined could make my mouth so happy!? Plus – let’s be sure to take note that it is quick and easy to prepare – a bonus on work day mornings when you want to sit down and enjoy a meal before running out the door but not have to wake up an hour earlier just to enjoy it.
This recipe is also a balanced meal. You have your carbs, protein and healthy fats. Depending on your toppings you can even get vegetables thrown into the mix along with dairy. This is going to fuel your body so much better than just grabbing that granola bar that’s be at the bottom of your purse for who knows how long.
Breakfast, Brunch & Appetizers – Oh My!
Need something to serve for brunch as well? Here you go! Just beef it up a bit and add a bowl of mixed fruit, some freshly cooked bacon and a mimosa. I think I’ll be enjoying that this weekend because that sounds amazing. Cheers!
Not only can this recipe be made for the morning, it can be versatile and served as an appetizer for your girls wine night as well. Replace the toasted bread with smaller toasted slices of baguette and enjoy little mini versions to serve for a party. I’m sure your girls won’t say no to that! If you were to serve this for an appetizer, I’d recommend either using a hard boiled egg so you can just have some small slices or omitting the egg and getting creative with your toppings instead. Oh, of course a nice glass of Chardonnay would pair real well with that.
