There’s no secret here, I love to cook! While there are days that I love to take a recipe and put my own twist on things. There are also days I love to enjoy a recipe that’s already guaranteed to be a winner. Insert, anything that Tieghan Gerard makes. She’s the cook behind Half Baked Harvest. If you guys haven’t been following her, please go do so right now! So with that, I wanted to share my favorite Half Baked Harvest recipes that I just can’t get enough of.

Roasted Cauliflower Salad with Creamy Honey Mustard Vinaigrette.
This salad is perfect for dinner or lunch. I love to serve it up with some fresh warm bread. Plus, it’s definitely a healthy recipe so you can feel free to pile your plate up extra high with all the goodness. The roasted cauliflower and chickpeas are the real winner here. You toss them with olive oil, smoked paprika, chipotle and garlic and then roast them in the oven. They come out crispy and bursting with flavor.
Pesto Chicken Saltimbocca with Burst Tomatoes and Burrata.
This dinner is perfect for heading into spring / summer. The chicken gets nice and crispy and who doesn’t love fresh and ripe tomatoes. Of course with the newest obsession of Burrata you can’t go wrong. I think I’d even just cook the tomatoes from this recipe and serve them up with some fresh pasta and call it dinner!
Brown Butter Pumpkin Tortellini Alla Vodka.
Forget Pumpkin Spice Lattes! If you’re looking for a meal to make during the fall to fill your pumpkin quota, this is it. Plus, it only calls for 1 cup of pumpkin puree. So if you have the large can, you can still make some yummy baked dessert with the remaining puree too. But you guys, seriously this sauce was phenomenal and just screams cozy comfort food.
Sheet Pan Hawaiian Pineapple Shrimp Tacos with Creamy Jalapeno Special Sauce.
This is the perfect meal to make to spice up Taco Tuesday or if you’re having friends over. It may look simple but the flavors that are paired together make this meal one for the books. It’s the perfect dinner to make during the summer and enjoy out on the patio sipping a nice cold Paloma. Charring the tortillas over the stove is the move that really makes these tacos next level.
Chocolate Chunk Chai Banana Bread.
Because we all need something sweet to have at the end of a meal! I’ve made banana bread, chocolate chip banana bread and brown butter banana bread brownies. BUT this recipe here takes the W. I love the mix of adding Chai seasoning into the banana bread. Plus, if you’re anything like me, then you always are forgetting to eat bananas before they get too ripe. The real kicker here, is it’s topped with Maple Butter as this bread comes out of the oven. Talk about next level deliciousness!
