Whenever I think of sweet potatoes, my mind usually goes to sweet potato pie or sweet potato casserole. Don’t get me wrong, both are amazing options but they tend to lean a little bit more on the indulgent side instead of healthy. SO, when these oven baked garlic parmesan sweet potatoes landed on my plate I knew I had to share them with you all!
The thing that I fell in love with the most about these potatoes are that they get crispy on the outside, but also have a nice soft and chewy bite on the inside. Basically I’m describing that these are my favorite version of a cookie just in sweet potato form!
Bonus, they’re cooked on a sheet pan so less clean up. Which we all know is great for our husbands who are so graciously cleaning up after we cook them dinner. You can also add chicken or salmon to one side of the pan as well to cook at the same time so you’re getting even more accomplished with one sheet pan. How to Make Oven Baked Garlic Parmesan Sweet Potatoes
- Preheat your oven to 400 degrees Fahrenheit (or 200 degrees Celsius). Line a baking sheet with parchment paper.
- Prep your sweet potatoes by cutting them into 1/4 inch thick rounds. Use either a sharp knife or a mandolin. Arrange your potatoes on a baking sheet, slightly overlapping them.
- In a small bowl, mix together parmesan & gruyere cheese, herbs de provence, salt, pepper, rosemary and garlic.
- Brush the potatoes with melted butter and sprinkle on top the cheese mixture.
- Place in oven for 25 minutes. Once potatoes are cooked and golden brown, remove from oven and sprinkle with fresh parsley (if desired)
Tips
- If slicing sweet potatoes with a knife, slice one side of the sweet potato to make it flat to keep it from rolling while cutting.
- Cooking time could vary based upon the actual thickness of your potatoes. Check around 20 minutes to see if they are done early or need extra time.

- 3 Tbsp melted butter
- 1/2 tsp freshly cracked black pepper
- 1 Tbsp minced garlic
- 1 tsp salt
- 1/2 cup grated parmesan cheese
- 1/2 cup grated gruyere cheese
- 1 Tbsp herbs de provence
- 1/2 Tbsp rosemary
- 1 Tbsp fresh parsley, for topping optional
