There’s something about homemade guacamole that just says let’s Fiesta! It also just so happens to be that yesterday was Cinco de Mayo. You know I was going to be enjoying some Mexican cuisine and of course some Coronas. Usually my go to beverage with tacos is a delicious Paloma, but I still need to stock up on Tequila here in Switzerland. Most importantly, you can’t have a Fiesta without the main star – guacamole. Am I right!?
Not only does guacamole taste great with tacos, it’s delish on a southwestern omelette in the morning, avocado toast, perfect app for parties, and can even place it over cumin and lime grilled salmon. I mean it’s proof that it can literally work for any time of the day. Or at least it can in my book! Plus making it from scratch at home is simple and comes with zero chemicals that can be added in from the store bought packages.
This recipe is super simple and only requires a few ingredients. Avocados, shallot, garlic, cilantro, lime, roma tomato, jalapeno and my secret ingredient…. Trader Joe’s Chilli Lime Seasoning. I am so glad I decided to pack this with me haha. Literally though, I packed all my spices and I’m not mad about it.
Guacamole for a Fiesta
Ingredients
- 2 Ripe Avocados
- 1 garlic clove minced
- 1 shallot minced
- 1/2 cup Cilantro chopped
- 1 Roma tomato diced
- 1/2 tsp Trader Joe's Chilli Lime Seasoning
- 1/2 lime juiced
- 1 small jalapeno or 4-5 slices from jarred Jalapeno seeds removed for less heat and diced
Instructions
- In a large bowl mash your avocado.
- Add in all other ingredients and stir to combine
- Add in salt if desired and top with some fresh cilantro leaves. Serve with your favorite Tortilla chips.
