Of course, a glass of PInot Noir is a bonus. I swear my mom has the best recipe for Chicken Parmesan but it is a bit time consuming and let’s be real, who has time these days!? I still wanted to make something that reminded me of home but in about half the time. Insert – Easy Skillet Chicken Parmesan perfect for two. You get that crispy crunchy coating and the warm melty cheese on top. Yum!
I first made this recipe on New Year’s Eve for Anthony and me. I wanted something that would be a little “romantic” but quick on time as we had friends coming over at 8pm. Well, we had a real winner here and I’ve made it about 5 more times since then.
Speaking of New Years Eve, this dinner recipe is quite different from my usual spread but living in a new place where items are MUCH more expensive than I’m used to, I had to make a sacrifice. We didn’t have the grilled steak and lobster tail like previous years. Typically served with fettuccine, a big greek salad and rolls. Wow, my mouth is watering just speaking of these past meals! But, let me tell you this recipe still hit the spot!
A meal that is perfect for a busy week day but elegant enough for a date night. Enjoy this meal dressed in your comfy clothes watching the latest Netflix show or put on something fancy and pour the wine and let the celebrations begin! Easy Skillet Chicken Parmesan for Two.
Ingredients
- 1 Large Chicken Breast split in half to create 2 chicken pieces
- 1/2 cup Sunflower Oil or any oil with a high smoke point
- 1 cup Panko or Traditional Bread Crumbs
- 1/2 cup Grated Parmesan Cheese
- 1/2 tsp Italian Seasoning
- 3 Tbsp Mayonnaise
- 1/2 cup Pasta Sauce of your choice plus a little extra for pasta
- 1/2 cup shredded mozzarella cheese or 4 oz of sliced fresh mozzarella
- Salt & Pepper to taste
- Fresh Basil or Parsley for garnish
Instructions
- Butterfly chicken breast and then cut in half to create 2 chicken pieces. Place chicken between plastic wrap and pound out chicken to create even 1/4 to 1/2 inch pieces.
- Season chicken with salt & pepper and Italian seasoning on both sides.
- On a large plate mix breadcrumbs and parmesan cheese
- Heat a large frying pan over medium high heat. Add oil to pan and allow to get hot. (I would not use EVOO here due to it will burn and create a bitter taste on the chicken)
- While oil is getting hot, brush Mayonnaise on both sides of chicken and then coat in the bread crumb mixture.
- Add chicken into hot pan and cook 3-4 minutes, undisturbed, until golden brown and then flip chicken.
- Add a 1/4 cup of pasta sauce on top of chicken and then layer mozzarella cheese on top.
- Cover to allow for cheese to melt and for the chicken to finish cooking
- Place over a large serving of pasta (add additional pasta sauce on top of pasta if necessary) Top with basil or parsley if desired. Enjoy!
