If there’s one thing I could do everyday it would be to watch Food Network. Well I’ll admit that five out of seven days of the week I am! Ask me a question regarding the latest movie which actor / actress was in it I’ll have no clue. But if you want to know who all the Food Network stars are I’ve got you! There are many amazing chef’s on the channel but I’d have to say one of my favorite is Giada De Laurentiis.
She started her Food Network journey with Everyday Italian and I absolutely loved it! I loved that she was cooking in her home and it seemed like I was at her house enjoying all her yummy meals. (If only that was the case, right!?) Her recipes range from simple to putting your cooking skills to the test and I love that. She’s all things Italian and who doesn’t love Italian food!?
I’ve been turning to her even more now that our trip to Italy is right around the corner! Thankfully she not only shares amazing recipes but she shares all of the places you need to visit in Italy as well! I’m personally super excited for allllll the Gelato, Pasta, Pizza, Wine and ok the scenery.
While browsing her website I came across a recipe I had made before and remembered that I loved it! Giada’s Salmon Baked in Foil was going to be perfect for my dinner that night. It’s light, easy to cook and pairs perfectly with a nice glass of a dry white wine! I served this with some risotto and broccoli. If you don’t want to spend your time in the kitchen though you can always roast some potatoes while your Salmon is in the oven too!
Giada’s Salmon Baked in Foil
Ingredients
- 2 Salmon Filets 5 ounces each
- 1/2 Tbsp extra virgin olive oil plus 1 tsp
- 1/2 Tbsp Balsamic Vinegar
- Salt & Pepper to taste
- 2 Roma Tomatoes chopped
- 1 Shallot chopped
- 1 Tbsp Fresh Lemon Juice
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 Handful of basil leaves for serving
- 1/4 cup parmesan cheese for serving
Instructions
- Preheat the oven to 400°F.
- Sprinkle salmon with 1 tsp of olive oil and Salt & Pepper (to taste).
- In a small bowl mix together olive oil, balsamic vinegar, shallot, tomatoes, thyme, oregano, lemon juice and salt & pepper.
- Create a boat shape with tin foil for your salmon to bake in. Place salmon in the foil and spoon over the mixture evenly on each salmon. Seal the packets closed.
- Place salmon in preheated oven and cook for 20 – 25 minutes. Depending on how thick your salmon is can vary the actual cooking time.
- Take out of oven when done and enjoy! Top with desired amount of Parmesan Cheese and Fresh Basil! Be careful when opening the Salmon packets as there will be some steam that will come out from them.
