Giada's Salmon Baked in Foil

Simple ingredients, quick to prepare and you don't have to tend to it while it's cooking in the oven. The perfect meal to make when you want something quick, healthy and flavorful!

- 2 Salmon Filets 5 ounces each
- 1/2 Tbsp extra virgin olive oil plus 1 tsp
- 1/2 Tbsp Balsamic Vinegar
- Salt & Pepper to taste
- 2 Roma Tomatoes chopped
- 1 Shallot chopped
- 1 Tbsp Fresh Lemon Juice
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 1 Handful of basil leaves for serving
- 1/4 cup parmesan cheese for serving
Preheat the oven to 400°F.
Sprinkle salmon with 1 tsp of olive oil and Salt & Pepper (to taste).
In a small bowl mix together olive oil, balsamic vinegar, shallot, tomatoes, thyme, oregano, lemon juice and salt & pepper.
Create a boat shape with tin foil for your salmon to bake in. Place salmon in the foil and spoon over the mixture evenly on each salmon. Seal the packets closed.
Place salmon in preheated oven and cook for 20 - 25 minutes. Depending on how thick your salmon is can vary the actual cooking time.
Take out of oven when done and enjoy! Top with desired amount of Parmesan Cheese and Fresh Basil! Be careful when opening the Salmon packets as there will be some steam that will come out from them.
