Holiday Garlic Roasted Sweet Potatoes

These Holiday Garlic Roasted Sweet Potatoes are going to be a showstopper at your holiday gatherings! Move over sweet potato casserole because this recipe is the new all star in town. I’m not kidding though. These are SO good. They are tender and full of flavor. A great side dish to pair with roasted meat during the holidays. Think turkey, ham, roast beef, chicken. It literally goes with it all!

Even better, it’s super simple to make and can be prepared ahead of time so all you have to do is throw it into the oven when guests arrive. Now that’s a win for me.

Holiday Garlic Roasted Sweet Potatoes

What You Need

  • 2 Large Sweet Potatoes washed and peeled
  • 2 Tbsp Butter, melted
  • 1 Tbsp EVOO
  • 2 Garlic Cloves, minced
  • 3 Tbsp Grated Parm Cheese
  • 1/2 tsp Italian Seasoning
  • 1/2 tsp Garlic Powder
  • 1/4 tsp Red Pepper Flakes
  • 1/4 tsp Ground Black Pepper
  • Salt – to taste
  • 1/4 cup Freshly Grated Gruyere Cheese
  • Fresh Dill & Thyme

While I love my Grandma Shandors Sweet Potato Casserole (IYKYK) during the holidays, sometimes you just need to mix it up. I wanted to make something that was still delicious but a little more health conscious. When I say a little, I mean a very little because I’m only swapping out the sweetness of sugar for the savory of cheese. Once it comes out of the oven and is crispy and golden brown on the top it looks so delectable that you’re going to want to dive right into these. Plus this looks beautiful on your dinner table with the spiral design from the potatoes!

How To Make the Holiday Garlic Roasted Sweet Potatoes

  1. Preheat oven to 400 degrees F. While oven is preheating slice your sweet potatoes into 1/4 inch circles. You’ll want the potatoes to be the same size so they cook evenly.
  2. In a large zip block bag, add potatoes, butter, evoo, parm cheese, italian seasoning, garlic powder, red pepper flakes, pepper and salt. Give bag a really nice shake to evenly coat all of the potatoes
  3. Lightly butter the pie dish and arrange your sweet potatoes in a spiral formation. Top with Gruyere Cheese, Dill & Thyme.
  4. Place in oven to bake for 35-40 minutes until potatoes are tender and cheese is golden brown on top. Top with additional fresh herbs like Thyme and Rosemary if you’d like.
  5. Enjoy!

Tips to Make the Holiday Garlic Roasted Sweet Potatoes

  • The timing of cooking your potatoes will vary based on how think you cut them. Check around 30 minutes to see if you need the full 40 minutes.
  • Remove bracelets / hair ties / watches and don’t wear long sleeves. Trust me when you’re grabbing the potatoes out of the buttery cheese goodness bag you’re not going to want to get everything you own covered in it!
