- Preheat oven to 400° F. While oven is preheating slice your sweet potatoes into 1/4 inch rounds.
- In a large zip block bag, add potatoes, butter, evoo, parm cheese, italian seasoning, garlic powder, red pepper flakes, pepper and salt. Give bag a really nice shake to evenly coat all of the potatoes.
- Lightly butter a pie dish and arrange your sweet potatoes in a spiral formation. Top with Gruyere Cheese, Dill & Thyme.
- Place in oven to bake 35-40 minutes until potatoes are tender and cheese is golden brown on top. Top with additional fresh herbs like Thyme and Rosemary if you’d like.
